The Best Side Dish
If you do not like sweet potatoes, you have two options at this point. You can either keep reading and have me change your mind, or you can decide to be set in your ways and stop at this first sentence. I am here to declare, loud and proud, SWEET POTATOES ARE THE BEST SIDE DISH!
Now, I know it seems strange, my passion for this vegetable but let me explain some of the many ways you can use it.
*Sweet Potato Hash (my personal favorite)
Dice up a sweet potato
Cook them on the stove with olive oil, salt, and cinnamon (usually takes 10-15 minutes)
Make sunny side up eggs and lay them over the hash, delicious. Add some turkey bacon and bam, a yummy breakfast for dinner.
The hash is a great compliment to any dish, especially a pork chop or roast. Add another veggie, maybe broccoli or asparagus, and the flavors are incredible together.
Mix the hash with sausage (turkey or beef), peppers, onion, tomato, asparagus, broccoli and put that mixture over rice, spaghetti squash, or pasta. The hash adds a sweet kick, so yummy.
*Sweet Potato Fries
Slice up a sweet potato
Place on a baking sheet, toss in olive oil and salt
Bake on 400 for 15/17 minutes
Broil on high for 5 minutes (if you like crispy)
I love the fries with a good, lean ground beef (or turkey) BBQ burger.
Steak and Fries? Yes, please!
*Baked Sweet Potato
Spray the sweet potato with olive oil and sprinkle salt
Wrap in aluminum foil
Place on a baking sheet and bake on 400 for 60-80 minutes
Put in a crock pot and cook for 3 hours on high or 6/7 hours on low
Grilled chicken, sweet potato, and a salad makes for an easy meal prep and a delicious go to!
Top with black beans, red peppers, jalapeno, diced onion, sprinkle with salt and lime juice and add a bit of light sour cream.
