Bailey Tries... Crazy Crust Pie



I’m always looking for a quick and easy way to make something delicious that requires minimal clean up and time so when I saw this old magazine clipping I knew I had to try it. Not only did it meet the aforementioned requirements but it also kind of seemed like it wouldn’t work. Actually, much like my old coconut mystery cake, I doubted the veracity of the recipe.



From a time and clean up standpoint, this was as easy as it came and I had all of the ingredients already in the cabinet except the shortening and pie filling. You literally mix everything in one bowl with no sifting or weighing required. I also liked that, unlike traditional pie crusts, this required no rolling which means no flour to clean off of surfaces, the floor and myself.



I did learn after this attempt that the filling doesn’t move from its location so if you want a thinner “crust” or a less deep filling then you need to spread it out further than I did. I was also concerned that the filling would burn on the bottom because of sinking but it didn’t. Now, here’s my one complaint… It is definitely NOT a pie or a crust. It’s a cobbler. Delicious and easy but not a pie. It reminded me in texture of those throw together cobblers that are made with dry cake mix. I will say that the top layer crisped up nicely and would work well with any sweet filling.



I actually think I may try to make the batter without the sugar, maybe add some herbs and then create a filling for chicken pot pie or like a cottage pie. It would be far simpler than rolling out a crust like I normally do and I think you could even substitute out the flour for cornmeal and fill it with chill or stew. Yummy! Perfect experiments to try as we head into fall!
